Bars and Lounges Manager

Select Hospitality has taken recent instruction to assist in recruiting for a Bars and Lounges Manager.

Job Summary

This position focuses on ensuring the successful delivery of Food and Beverage service across three outlets. The role is balanced between working operationally within the areas of responsibility and developing and implementing operational standards. A large focus for this role is ensuring continual training and development of team members.

Skills and Knowledge:

• Extensive knowledge of Bar/Lounge operational procedures.
• Knowledge of menu composition.
• Knowledge of beverage & cocktail preparation.
• Knowledge of beverage laws; food handling standards and safety and sanitation.
• Knowledge of & ability to implement liquor control procedures.
• Ability to convert the knowledge of wines and alcoholic beverages into product sales and service.
• Knowledge of pricing rationale and strategies.
• Knowledge of purchasing, inventory controls, supplies and equipment.
• Knowledge of governmental regulations and safety standards.

Operational and Administration tasks:

• Works operationally within outlets to ensure successful delivery business.
• Regularly leads shifts within outlets.
• Monitor quality of food and beverages served within the outlets.
• Ensures regular, on-going communication is happening in all areas.
• Continually communicate a clear and consistent message regarding departmental goals to produce desired results.
• Ensure promotions occur within outlets that drive sales.
• Ensure stocktakes occur and ensures safety of stock and other high value items.
• Creates an atmosphere that supports exceeding guest expectations.
• Empowers team to provide excellent guest service.
• Is highly visible and interfaces with customers on a regular basis to obtain feedback on service levels and overall satisfaction; effectively responds to and resolves guest problems and complaints.
• Completes competitor checks.
• Completes menu engineering and comp set analysis.
• Support with menu development.
• Ensure ongoing training.
• Produce rotas – ensuring economic utilisation of staff and satisfaction of peak period demand. To use this information to ensure the weekly labour forecast is accurate and within budget.
• Helps manage supplier relationship.
• Participates in daily stand-up meetings and models desired service behaviours in all interactions with guests and associates.
• Observes service behaviours and provides feedback to individuals.
• Reviews guest satisfaction results and other data to identify areas of improvement. Reviews findings with team.
